HURRICAN HELENE UPDATE:
Visit our farm and learn practical living skills on a working farm. We offer farm tours full of ideas for your farm/homestead dreams. If you want to go deeper, we offer classes in gardening, food preservation, farm to table cooking, and other skills. Classes are taught in our treehouse and outside on the farm with hands on experiences to back up the wealth of knowledge you will gain. Class are small with opportunities for personal learning. Private classes available for individuals or groups.
Classes are held in the afternoons. Stay tuned for new offerings!

Farm To Table Cooking

Discover how to cultivate, harvest, and prepare your own produce through our comprehensive classes. With effective techniques, you can minimize food waste while maximizing the value of your harvested fruits and vegetables. Our sessions introduce approaches to preparing a variety of produce, all conducted in an engaging and supportive environment. Participants should expect hands-on experiences and the opportunity to sample freshly prepared dishes. Sara is currently developing a cookbook, providing attendees with exclusive access to recipes for authentic farm-style cuisine. All classes are held on-site at our farm, with an outdoor kitchen to ensure an immersive experience in farm life.

 Cooking Basics for Cooking Fresh; Gain practical skills with fresh foods and learn essential techniques. Try different ways to use garden produce so you get the most from your harvest or market purchases.

Cast iron cooking; Discover how to care for cast iron and cook three dishes using classic techniques. Bring a skillet that needs attention and learn proper cleaning and seasoning. With good maintenance, your cast iron can last for generations, making both you and your grandma proud.  

Pie in the Sky; Learn the secrets for the perfect pie crust and how to make delectable sweet and savory pies without a set recipe. Become the pie guru you always wanted to be.

Food Preservation

Discover essential food preservation techniques such as drying, fermenting, freezing, and canning. You’ll have the chance to get hands-on practice by preparing foods for storage and selecting different fruits or vegetables to create your own preserved treats.

Specialized courses cover both hot water bath and pressure canning methods, guiding students step-by-step through preserving a chosen food item. You’ll gain the skills to craft beautifully preserved foods that will last for years. Explore an operational canning room featuring over 100 gallons of assorted preserved foods, and learn effective strategies for organizing and storing your supplies to ensure lasting enjoyment and long-term food security.

Jams, Jellies, and Chutneys—oh my! Midsummer brings an abundance of our favorite fruits, making it the perfect time to create delicious preserves with fresh produce and try hot water bath canning. Participants will have the chance to taste both traditional and unique recipes, plus take home a jar of homemade goodness to share. This class offers practical guidance on which fruits you can grow and the most flavorful ways to enjoy and preserve them for future use. Get ready to make the most of your summer!

Putting up the Harvest; Learn food preservation techniques for common garden veggies. We will cover a variety of techniques including freezing, drying, fermentation, pickling, and hot water canning. A canning demo will wrap it all up with a jar of pickles for you to take home. We will not only get to talk about the pleasure of eating but about the cultural and ecological significance of your food choices. Learn about eating in season, and how careful preservation can extend that season throughout the year.

Gardening

Discover how to create a garden from scratch, select which plants are best for your needs, build fertile soil, put your plan into action, and maintain your crops through to harvest. At Two Trees Farm, a range of classes covers every phase of gardening, tailored to the different seasons. Benefit from the expertise of instructors who collectively have more than 30 years’ experience in growing food for personal use and small-scale markets.

Gardening in the Mountains; Planning and planting for success; 

This class covers strategies for gardening in WNC’s unique mountain climate. Learn which varieties thrive here, how to build healthy soils, use integrated pest management, and maintain your garden efficiently. Topics also include space-saving techniques, boosting pollination, and applying basics of botany, ecology, and permaculture for a productive, low-maintenance landscape.

Gardening in the Mountains: Building Dynamic Soils  

Participants will receive practical instruction on developing natural soils. In Western North Carolina, much of the topsoil has been depleted. It takes nature at least 100 years to form one inch of topsoil, and up to 500 years to establish fertile soil; however, this timeline can be accelerated by incorporating organic matter, beneficial soil microbes, and fungi. Attendees will gain valuable insights and hands-on experience with effective techniques designed to enhance soil quality. Please be prepared for hands-on participation and leave equipped with knowledge and inspiration.

 

The Art of Herbs; Enjoy a cup of tea and have a walk around our farm and get herby. We will discuss growing fresh herbs, making homemade teas, syrups, and cooking with herbs. Bring your favorite mug and be ready to enjoy a fresh new adventure.
